help predator newb

So I picked up a Polaris predator last week that had at Polaris pure slip-on and I just added a uni filter upon cleaning the carburetor I replace the main jet with a 165 and reinstall when I disassembled the carburetor I took off the choke circuit and access to the fuel bowl without detaching the throttle linkage my problem is when i reassemble the car and reinstalled it I couldn’t get the bike to start until I manually choke the carburetor by putting my hand over the air inlet and when it did start it was at wide open throttle I cut off the engine shortly thereafter because the header pipe started to turn red hot just wondering what could cause this I hate messing with carborators because they’re so delicate I made sure anything I touched was thoroughly cleaned and the only part that I disassembled was the main jet as well as the air fuel screw adjusted to two and a half turns out any help would be greatly appreciated as I don’t want to have to take it to a shop
