Commander still over heating

Last weekend I had over heating problems in my 13 commander. I put a new fan on and changed the air filter. My fan was not coming on right. We had a ride this weekend and I ran my fan to a toggle switch to keep it on at all times. After riding for about 3 hours with no problems I noticed my temp gauge was up to 6 bars. I checked reservoir and it was full and so was my coolant and when I popped the coolant cap it did not shoot out like it would when it was over heating and 6 or 7 bars. I waited to let it cool to 3 bars and rode again but it still continued to run hot. At this point it had gotten up to 7 bars, but when you turn it on and hit the gas it would instantly go down to 3 or 4 bars and stay that way until you started to ride. So I’m thinking it’s the thermostat that might be my problem?
