Trail rig under 3k?

So my parents have a rzr 570 and it’s been great, I had a quad that I used to follow them with but my fiancĂ© doesn’t ride atvs anymore since she injured her back a few years ago, we sold hers and that $$$ is long gone and when we go out with my parents we have to do shorter trails and all can’t go on all day trails, I sold my atv to get something more sxs like, we will be going to utah (Dixie national forest) in a next month so I need something soon, not a lot of time to save, 3k is what I have to spend….I’ve test drove a 650cc Joyner Buggy but it had NO power, not sure of it was just the one I drove but it was gutless…I don’t need a speed demon just something that doesn’t need to get towed up hills lol I saw some BMS Buggys but read horror stories and I don’t want to deal with that. I was wondering if a " shorter "wheelbase dune buggy/sandrail on dirt tires will suffice? I don’t need to fit every trail as much as I’d like to, and its not realistic to get any big name sxs right now…I’ve never driven one but one I’d think a 1600cc vw motor would do decent on most trails? Positive input appreciated.

Side note: found someone selling a 250 mini buggy swapped with a 600cc 1994 Kawasaki street bike motor, axles off a 900 rzr and frame reenforced …says itll do 100mph although that’s not what I want it for at least the power is there, good idea if done right or am I asking for trouble? It’ll same width and length of 570 just sits a littler lower.
