where to go, need suggestions quick!

hi all, my wife and I had our 20th anniversary all planned out to go to Washington where I grew up but due to all the fires the trip location has to change. We live in Utah and are ok with any destination within 6 to 12 hours from salt lake city, no trails are too hard but we prefer less populated (no tourist areas) we will be towing a 30 foot trailer with the rzr behind that.
we had considered rubicon but with the late planning???
Any suggestions would be appreciated
thanks
